Aloo Bonda happens to be one of my favorite potato snacks. Hence, also known as Potato Bonda, it is nothing but a super delicious snack of spiced mashed potatoes formed into balls, coated with gram flour or chickpea flour (besan) batter and deep fried to perfection. The ingredient list might be a bit long but Aloo Bonda recipe is very simple and easy to make. Not only is it a hearty vegetarian dish, but it's also suitable for vegetarians.
About Arubanda
If you are familiar with the popular Maharashtrian language patatawada, then this Aloo Bonda is its South Indian cousin. Basically, in South India, “bonda” translates to “ball” and “aloo” is your staple vegetable, potato. This dish is named because its shape resembles a ball.
Although the Aloo Bonda recipe is similar to batata vada in Maharashtrian cuisine in terms of texture, appearance and taste, the main difference lies in the spices used in the mashed potato mixture.
Also, in South Indian Bunda, rice flour is added to the batter along with gram flour. While in Maharashtrian vada, rice flour is usually not added to the batter.
You can make an onion-free, garlic-free version of Aloo Bonda by skipping these two ingredients in the recipe. Serve this bonda with earthy coconut chutney, tomato chutney or coriander chutney. A hot cup of tea is also great for them.

There are many other variations of bonda in southern India, which contain other major ingredients. For example, in addition to Aloo Bonda, there are bonda made from paneer, sweet potatoes, green beans, tapioca, other vegetables, grated pineapple and even minced meat.

Udupi cuisine in Karnataka is famous for its wide variety of bondas. One of the most popular variations is vegetable bonda, which is made from a mix of vegetables such as carrots, green beans, green beans and coriander leaves.
Famous street food, Mangalore bonda aka Golibaj Mangalore bajji is a soft, spongy fritter made from all-purpose flour (maida), coconut, spices and herbs. Therefore, it is also called maida bonda. In this case, essentially no filling mixture is covered in batter. Place the entire mixture as packets in hot oil and fry.
Step-by-step guide
How to Make Aloo Bonda
Make the filling
1. Start by boiling 4 to 5 medium potatoes. Then, peel and mash them while still hot.
2. Heat 1 to 1.5 tablespoons oil in a frying pan. Add 1 tsp mustard and 1 or 1.5 tsp urad dal and let the mustard seeds splash and the udal turn golden brown.
3. Add 1 medium chopped onion and sauté until translucent and soft.
4. Now, add 1 tsp ginger garlic paste, 12 to 15 curry leaves and 1 or 2 chopped green chillies. Saute for one minute.
5. Add 1/2 teaspoon turmeric powder and 1 pinch of asafoetida and stir.
6. Now, add 2 tbsp chopped coriander leaves and salt as required and mix.
7. Add the sautéed mixture to the mashed potatoes in the bowl.
8. Mix well. If there is moisture in the mashed potatoes, you can cook the potato mixture for a few minutes. Add ⅓ to ½ teaspoon lemon juice and mix well. Check the seasoning and add more salt, paprika or lemon juice if needed.
9. Form small to medium balls from this mixture. I usually flatten the balls slightly to make them easier to fry.
Make batter
10. Combine 1 cup gram flour (besan), ¼ cup rice flour, ¼ teaspoon turmeric powder, ½ teaspoon red chilli powder, 1 pinch of asafoetida (hing), 1 pinch of baking soda and salt in another mixing bowl.
11. Add water as needed and stir evenly to make a thick flowing batter.
Making Aloo Bonda
12. Heat oil in a kadai or pan for deep frying. Dip each potato ball into batter and coat evenly. Add the batter-coated potato balls to the medium-hot oil.
13. Fry until both sides are golden brown. Drain the Aloo Bonda with kitchen towels and remove excess oil.
14. Serve Aloo Bonda hot with coconut chutney or tomato sauce.
Expert Tips
- Want to make a spicier bonda? Then, add some more green chilies to the potato mixture. You can also add some paprika to the potato mixture if you like.
- You can easily make this recipe without adding any onions or garlic.
- After cooking the potato mixture, if it feels like there is still moisture in it, cook for a few more minutes.
- Depending on your taste preference, adjust the seasonings, spice powder and lemon juice in the potato mixture.
- After shaping the potato mixture into small or medium balls, you can also flatten them before dipping them into the batter. This makes frying them easier.

This potato bonda is a fried tea snack in South Indian cuisine. Aloo Bonda is made from gram flour and rice flour batter and filled with spiced mashed potato filling.

Make stuffing
Start by boiling the potatoes in a saucepan, steamer or pressure cooker. Then peel and mash them while still hot.
Heat oil in frying pan. Add mustard and urad dal.
Let the mustard seeds splash and the urad dal turn golden brown.
Add chopped onions and sauté until translucent and soft.
Now add ginger garlic paste, curry leaves and green chillies. Saute for one minute.
Add turmeric powder, asafoetida and stir. Now add coriander leaves and stir.
Add potatoes to this mixture, or add sautéed mixture to potatoes. Mix well.
If there is moisture, you can cook the potato mixture for a few minutes.
Add lemon juice and salt. Mix well.
Check the seasoning and add more salt or paprika or lemon juice if needed.
Form medium-sized balls from this mixture.
Fried Aloe Bonda
Heat oil in a kadai or pan for deep frying. Dip each potato ball into the batter and coat evenly.
Add the batter-coated potato balls to the medium-hot oil.
Fry until golden brown on both sides. Blot up excess oil with paper towels.
Serve aloo bonda with coconut chutney or tomato sauce.
