• To get started with this one-pot chickpea and eggplant curry recipe, have the chickpeas and other ingredients ready for the curry.

  • Heat oil in a heavy bottom pan or kadhai. Add all the spices like star anise, cinnamon stick, cardamom and peppercorns. Saute for about 10 seconds.

  • After 10 seconds, add the diced onions and minced garlic to the kadai and fry for about 2 minutes. Add eggplant and sauté for about 5 minutes.

  • Add required salt, water, cover and cook for another 5 minutes until the eggplant is soft.

  • Add the cooked chickpeas and spice powders including red chilli powder, black pepper powder and turmeric powder. After a minute, add coconut milk, 1/2 cup water and cook for about 3 minutes.
