Heat oil in a heavy bottom pan or kadhai. Add all the spices like star anise, cinnamon stick, cardamom and peppercorns. Saute for about 10 seconds.
After 10 seconds, add the diced onions and minced garlic to the kadai and fry for about 2 minutes. Add eggplant and sauté for about 5 minutes.
Add required salt, water, cover and cook for another 5 minutes until the eggplant is soft.
Add the cooked chickpeas and spice powders including red chilli powder, black pepper powder and turmeric powder. After a minute, add coconut milk, 1/2 cup water and cook for about 3 minutes.
