• To start making Andhra Dondakaya Ulli Kura Karam recipe, have all the ingredients ready and ready.

  • Place the cut Dondakaya into the pressure cooker, sprinkle with salt and 2 tablespoons of water, and cook on high pressure for 2 blasts.

  • After 2 blasts, turn off the heat and immediately release the weight with a fork or open the pressure cooker by placing it under cold water.

  • Once cooled, place the masala, roasted peanuts and tamarind in a small jar of a blender and add the mixture to make a powder. Grind it without adding water. Set this aside.

  • The final step is to now integrate everything for Andhra Dondakaya Ulli Kura Karam.

  • Heat oil in a heavy-bottomed pan over medium heat; add mustard seeds and allow to crackle.

  • Once done, add asafoetida and curry leaves and stir for a few seconds.

  • Add cooked Dondakaya/Tendli/Tindora and grated roasted masala. Give it a stir to combine thoroughly.

  • Cover the pot, reduce the heat to low and simmer the Dondakaya Ulli Kura Karam for about 10-15 minutes so that all the flavors are fully absorbed for a delicious taste. Check the salt and adjust to taste.
