Bombay Masala Sandwich
I made this sandwich a few weeks ago and absolutely loved it. The combination of green chutney, aloo masala and sandwich masala is perfect. My toaster was sitting in the corner of the cupboard not being used so used it to make this sandwich. But you can make this using a regular tawa or baking pan. This can also be a hearty breakfast or a light lunch or dinner.

This delicious masala sandwich is made on bread stuffed with an Indian spiced potato filling, stuffed with crunchy vegetables and then grilled in butter until crispy. You can toast the sandwiches in a sandwich toaster, griddle or tava. You can customize this sandwich to your liking. Add any toppings you like such as onions, cucumbers, cheese slices, tomatoes, lettuce.

Masala Sandwich Ingredients
Potato – Use large potatoes, pressure cook them until soft, peel and mash. You can cook potatoes in a pressure cooker or pan. You can also make the potato filling a day ahead.
Ginger, garlic and chilli – This is the main seasoning. Grind the ginger, garlic and green chilli into a paste and add to the sandwich.
Tempering- This recipe has simple concoctions like mustard and curry leaves. But you can add cumin seeds if you want.
Haricot vert – I use frozen green beans mainly for color and texture. You can also add chopped carrots and green beans.
For making Bombay Masala Sandwich
Slices of bread – You can use whole wheat bread, white bread, or sandwich bread, depending on your preference. Multigrain bread is a healthy choice.
Green Chutney – I used Homemade Green Chutney. Ready-made green chutney is also available in stores.

butter – Butter is what makes this sandwich so special. Make sure to use plenty of butter to toast the sandwich.
Ingredients – Lettuce, cucumbers, onions, peppers are some delicious toppings. You can also use sev, cheese.
How to Make Sandwich Masala at Home

This is one of the special powders used in the street shops of Mumbai for making sandwiches. I made a few sandwiches using this powder and they turned out delicious. Cumin seeds are roasted separately and ground along with other ingredients.
Sandwich Masala Ingredients
- ½ cup cumin seeds
- 15 cloves
- 1 stick cinnamon
- 2 tablespoons whole black pepper
- 1.5 tablespoons fennel seeds
- 1.5 tablespoons black salt
- 1 tbsp dry mango powder | Anjuer powder
How to Make Bombay Masala Sandwich (Step-by-Step Pictures)

1) Wash the potatoes and cut them in half. Place them in a pressure cooker, cover with water and cook on high pressure for 3 to 4 blasts. Once the pressure is relieved, open the cooker and strain the potatoes into a colander. Let potatoes cool for 10 minutes. Now peel off the skin.
Roughly mash potatoes with a fork or potato masher. Set aside.
Make Potato Marsala
2) Heat oil in a wok or frying pan. Add the mustard seeds and let them splutter.
3) Add curry leaves and mix well.
3) This is the main condiment for potato masala. I grind ginger, garlic and green chilies into a fine paste. Add this paste to the oil.
4) Mix the ginger, garlic and chili sauce and cook for 1 to 2 minutes until the fishy smell disappears.
5) Add a little salt and turmeric powder for color. At this point, you can add sliced onions if you wish.
6) Cook the mixture until the oil separates. The original smell of ginger and garlic must have disappeared by now.
7) Add green beans and mix well. I used thawed frozen green beans. If you use fresh green peas, they must be boiled separately before adding them.
8) Add cooked mashed potatoes.
9) Mix thoroughly. Finally, you can add some coriander leaves and lemon juice if you wish. This is your potato masala.

10) This is a sandwich so you can customize it to your liking. You can add or skip the ingredients you like. In this sandwich I used these ingredients.
Assemble the sandwiches
11) Take slices of bread. Make sure you use a slightly larger size sandwich bread to accommodate all the ingredients we are going to add.
Spread green chutney on bread slices.
12) Now sprinkle some lettuce on top. You can add or skip any ingredients.
13) Arrange the cucumber slices. Make sure to slice them thinly with a mandoline.
14) Spread generous amounts of hoagie masala.
15) Now scoop a spoonful of potato masala and spread it on top of the cucumbers.
16) Sprinkle with chili flakes. This adds the crunchy texture the sandwich needs.
17) Sprinkle some chopped onions on top.
18) Sprinkle some sandwich masala on top.
19) Cover with another slice of bread.

20) Now you can cook your sandwiches using a sandwich maker, griddle or regular frying pan. I use a sandwich toaster. Add butter to the top and bottom of the bread and place it in a sandwich maker.
21) Bake until cooked. Spread more butter on top if desired.
