To start making Ajwaini Tamatar Bhindi recipe, cut the Bhindi in half. Make sure the bhindi is not wet and is properly dry.
Heat the oil in the pot Heavy bottom pot, add Bhindi and stir for few minutes. Cook them over medium heat.
Cover and cook until cooked, stirring constantly.
Once done, remove from the pot.
Heat the oil again in the same heavy bottom pan to make the gravy.
Once the oil is hot, add asafoetida seeds and asafoetida powder.
After a minute, add tomato puree and required red chilli powder.
Let it cook over medium heat until the puree is done. Add sugar and salt to taste and cook for a while.
Finally add cashew paste, add salt, pre-cooked bhindi and mix everything well. Let the ajwaini tamatar bhindi cook for another 5 minutes and serve hot.
