• To start making Rava Kakdi Thalipeeth recipe (Maharashtrian style semolina-cucumber flatbread), first whisk together semolina, cucumber, chillies, coriander leaves, curd and salt in a mixing bowl.

  • Add water as needed (about 2-3 tablespoons) to make a dough that just holds all the ingredients together. Cucumbers also release some water when mixed, so add water carefully so the dough doesn't lose firmness.

  • Cover the bowl and set the dough aside to rest for 15-20 minutes.

  • If needed, add more water to form a pliable dough.

  • Divide the dough into 4-5 portions.

  • Grease a pan with some ghee.

  • Place 1 portion of dough on a greased baking sheet and pat into a thin round (about 6 inches)

  • Use your fingers to make a hole in the center of the patted dough, then make four more holes around the perimeter.

  • Drizzle a few drops of ghee in these holes.

  • Place the pot over low heat. Cover and cook until bottom is browned.

  • Flip the Thalipeeth and cook over low heat for a minute or until cooked.

  • Repeat process with remaining dough portions, slapping tomatoes directly onto skillet.
