• To start making Ballyvaughan or overnight oatmeal, pour the cereal into a bowl the night before. Add Greek yogurt, honey and milk/juice. Mix well. Cover and place in the refrigerator overnight.

  • The next morning, take the bowl out of the refrigerator. If you like it a little warmer, place it in the microwave for 30 seconds to bring it to room temperature.

  • The cereal will be soaked in the flavor of yogurt and juice. If you think it’s too thick, add more juice or milk. Add corn flakes or granola for extra crunch.

  • Sprinkle chopped nuts and fruit over overnight oatmeal. (I topped it with pistachios and dried cranberries. If you like it sweeter, add some more honey or maple syrup and serve Spiced Pumpkin Smoothie Recipe.

  • Variety:

  • In addition to Greek yogurt, you can also use fruit yogurt to add flavor. Strawberry yogurt works really well. You can easily mash some strawberries into yogurt and soak your granola in it.
