To begin making the Watermelon Margherita Granita, first puree the watermelon.Strain and pour into a large container mixing bowl. Discard pulp.
Add all the ingredients including syrup, lemon juice, mint leaves, tequila, and triple sec to the watermelon puree and mix well.
Taste and adjust as needed.
Pour into freezer-safe containers. Cover with plastic wrap and freeze.
After two hours, scrape down the mixture with a fork and return it to the refrigerator.
Do this about 3 times every 2-3 hours until the entire mixture is scraped down and resembles granita.
Ladle into glasses, drizzle a splash of tequila on top and garnish with watermelon balls, lemon slices and mint leaves.
