• To begin making the Watermelon Margherita Granita, first puree the watermelon.Strain and pour into a large container mixing bowl. Discard pulp.

  • Add all the ingredients including syrup, lemon juice, mint leaves, tequila, and triple sec to the watermelon puree and mix well.

  • Taste and adjust as needed.

  • Pour into freezer-safe containers. Cover with plastic wrap and freeze.

  • After two hours, scrape down the mixture with a fork and return it to the refrigerator.

  • Do this about 3 times every 2-3 hours until the entire mixture is scraped down and resembles granita.

  • Ladle into glasses, drizzle a splash of tequila on top and garnish with watermelon balls, lemon slices and mint leaves.
