To start with the spinach recipe, separate the spinach leaves from the stems and wash them in cold water.
Now put the pressure cooker on medium heat and add clean spinach, chillies, salt and a little sugar as per your taste and stir.
Now add tamarind and some water. Don't add too much water because spinach tends to lose water when cooked.

Taste the Puli Keerai, check for salt and spices and adjust as per your taste.
Your Puli Keerai recipe is ready and you can serve them with white rice and Vendakai Poriyar.
