There’s almost no one I know who doesn’t like nachos. Corn flakes are one of those cereals that appeals to all ages, from children to adults, except for those who may be allergic to it. The same is the case with this nacho Chivda. It's very addictive. So, I would say, whenever you are prepping, make a big batch because it can be done in a few hours!
Chivda is basically a Maharashtrian term for a fried savory mixture consisting of various ingredients including spices and dry fruits. This recipe shows the easiest way to make Makai Chivda.
Something similar, but without nachos and in a South Indian style, is this mixture recipe. You can’t miss trying this either.My personal favorites for these snacks include the following recipes Poha Chivda, Carla Bwindi Mixture and panchcadia.
For this nacho chivda, I used basic dry yellow corn flakes also known as corn poha or makai poha. They are fried to make this chivda. You can easily buy it from any Indian grocery store or order online.
The corn flakes used to make Makai Chivda are not ready-to-eat corn flakes. However, you can prepare this chivda even in ready-to-eat form. In this case, you have to lightly toast the tortilla chips with a little oil. Dried fruits can also be roasted with some oil or even dry roasted.
The best way to enjoy this chivda, made from corn flakes, is as a simple snack. But it also tastes great when paired with some chai.
Step-by-step guide
How to Make Nacho Chifuda
Fried ingredients
1. First weigh all the ingredients and put them into a bowl or plate. Heat the oil in a kadai until moderately hot. Place about 1/3 cup of corn flakes into a sieve. Dip a fine mesh spoon into the hot oil.
2. Fry the corn flakes, stirring with a spoon, until the corn flakes puff up and become golden and crispy. Do not brown the tortilla chips.
3. Shake the spoon to remove excess oil. Drain the tortilla chips on a plate lined with kitchen towel. Fry the remaining tortilla chips in the same manner.
4. Place the peanuts into the sieve spoon.
5. In the same way, stir with a spoon until crispy.
6. Take out the peanuts and place them on a kitchen towel.
7. Now, add the cashews to the sieve spoon.
9. Using the same method, fry the cashews.
10. Fry the cashews until golden brown. Avoid excessive browning.
11. Take out the cashews and drain on kitchen towel.
12. Next, add the raisins.
13. Fry until puffy and plump. Don't fry them anymore as they will become dense and chewy.
14. Drain the raisins as well.
15. Fry the curry leaves for a few seconds. Then, place them on the paper towels as well.
Making Nacho Chivda
16. While the fried ingredients are still hot, add 1/4 tsp turmeric powder, 1/2 tsp red chilli powder, 1/2 tbsp powdered sugar and salt as per taste.
17. Using a spoon, mix the sugar, salt and spices thoroughly with the remaining ingredients, being careful not to break the cornflakes. Check the taste and add more salt or powdered sugar if needed.
18. Once the Makai Chivda mixture has cooled, serve as a teatime snack or store in an airtight container or jar.
Cooking with corn flakes
Hands down, the best way to bring some crunch and chew to your breakfast cereal bowl is with corn flakes. But if you think usage ends there, you’re dead wrong. Because tortilla chips are definitely a versatile ingredient and very important in making dishes and cooking in general.
Therefore, when used, corn flakes are usually used in two forms – either directly, like Makai Chivda, or in crushed form, used to wrap or fry various dishes like pakodas, fritters, etc. Sometimes crushed corn flakes are also used in desserts to enhance the taste.
Other ways you can use corn flakes in fun ways is that you can add them to puddings, custards, cookies, or even make delicious mixes for a quick snack to munch on. There are different varieties of tortilla chips available in the market today. In my opinion, the best is traditional and original. However, seasoned nachos can also be enjoyed once in a while. After opening the package, be sure to seal it in an airtight box. Otherwise, it may become soggy by losing its crispness.

Fried Nachos Chifuda Ingredients

Add peanuts to sieve spoon
Fry in the same way, stirring with a spoon, until crispy.
Remove the peanuts and place them on a kitchen towel.
Now add the cashews to the sieve spoon.
Using the same method, fry the cashews until golden brown.
Remove cashews and drain on kitchen towel.
If using roasted chana dal, then fry it this way too.
Next add the raisins. Fry them until plump and puffy. Do not fry them again as they will become dense and chewy.
Drain the raisins as well. Fry the curry leaves for a few seconds. Then place them on the paper towel as well.
Making Nacho Chivda
While the mixture is still hot, add turmeric powder, red chilli powder, powdered sugar and salt. Mix well.
Use a spoon to mix the powdered sugar, salt and spices thoroughly with the remaining ingredients, being careful not to break the cornflakes. Check the taste and add more salt or powdered sugar if needed.
Once the nacho chivda mixture has cooled, then store in an airtight container or jar.
Serve the cornflake mixture as a teatime snack whenever needed.
