• To start making the millet cheese rolls, preheat the oven to 200°C and grease a baking sheet with butter.

  • We first boil the millet in 3/4 cup of water until soft. The millet should have absorbed all the water. If there is any excess water, pour it away and you can use it to make soup.

  • NOTE: Millets are just like lentils or bulgur, you have to cook them in a similar way.

  • In a large mixing bowl, combine all ingredients and stir well to combine. Set aside the millet cheese filling.

  • Use a rolling pin to spread the bread slices out a little so we can easily roll out the bread and its fillings. Place a spoonful of the millet cheese mixture in the middle, moisten the edges with a little water and roll up tightly. Press and seal the edges and trim off the excess. Place the millet and cheese rolls on a greased baking sheet. Do the same with the remaining bread slices.

  • To get a crusty top, dip the rolls in melted butter and roll them in the za'atar spice mixture. Do the same with the remaining rolls and place them on a greased baking sheet.

  • Place the rolls in the preheated oven and bake until the crust is golden brown, about 15 to 20 minutes.

  • Place delicious millet paneer rolls on a party plate and serve with date jam or strawberry chutney.

  • Serve baked millet cheese fritters as a party appetizer for any special occasion.
