To start making Kelfulachi Bhaji recipe, we first need to clean the banana flowers/plantain flowers.
Oil your hands and start working on the banana blossoms.
First, peel off the purple layer and remove the florets. In each floret, remove the longest string with a rounded end (called the “stamen”) and the thin, translucent covering.
Now chop the florets and soak them in diluted buttermilk or water.
Add the turmeric and salt to the buttermilk and let soak overnight (refrigerated) or for at least 30 minutes.

Heat a pan with oil, add cumin seeds and mustard and cook for 10 seconds.
Add hing, chopped garlic and onion and sauté until onion becomes translucent. When done, add the chopped florets without adding water. Add malwani masala and salt to taste.
Give it a stir, add jaggery and nuts and fry until the florets become soft and cooked.
You can sprinkle some water on it, cover it, or cook it. Make sure to continue frying so it doesn't stick to the bottom of the pan.
