• To start making Kelfulachi Bhaji recipe, we first need to clean the banana flowers/plantain flowers.

  • Oil your hands and start working on the banana blossoms.

  • First, peel off the purple layer and remove the florets. In each floret, remove the longest string with a rounded end (called the “stamen”) and the thin, translucent covering.

  • Now chop the florets and soak them in diluted buttermilk or water.

  • Add the turmeric and salt to the buttermilk and let soak overnight (refrigerated) or for at least 30 minutes.

  • Heat a pan with oil, add cumin seeds and mustard and cook for 10 seconds.

  • Add hing, chopped garlic and onion and sauté until onion becomes translucent. When done, add the chopped florets without adding water. Add malwani masala and salt to taste.

  • You can sprinkle some water on it, cover it, or cook it. Make sure to continue frying so it doesn't stick to the bottom of the pan.
