We started making the Vali Bhajji Ambat recipe by heating a non-stick pan and toasting coriander seeds, dry red chillies and coconut. Set it aside to cool.then grind it mixer into a coarse paste.
Wash the spinach leaves and chop them into stems.in a pressure cooker, sauté onions, add tamarind water, tur dal and spinach and tomatoes until it gives about 3 whistles. Release the pressure naturally when finished.
Once done, use a blender to blend the dal and other ingredients into a coarse curry. You can add some water to adjust the seasoning.
heat one thick bottom pot, add the ground paste and dal mixture. Adjust the consistency again and check the seasoning. Once the dal starts boiling, add jaggery to it.
To temper, take a small frying pan and add oil, once heated add mustard seeds and garlic and pour it over the dal mixture.
