Handvo Recipe – Delicious Indian Lentil Cake: Originating from the Indian state of Gujarat, this is a very popular and delicious cake made using a mixture of rice, lentils, vegetables, spices and herbs. The texture is perfect and perfect as a festive appetizer or for tea/coffee.
What is Hanwo?
One of my favorite things about Indian food is the variety it offers, whether it’s a snack, main course, side dish or dessert.

Each state has its own popular dishes, one of which is “Gujarati Sign Language”from the western Indian state (Gujarat).
it is savory cake made of A mixture of lentils (mixed or a special one), along with rice, grated vegetables such as Lauki (Also known as “doodhi” – one of the most popular), Carrots, cabbage, basic spices and herbs (added on top after baking).
- The texture is grainy but held together perfectly by mixing and the taste is absolutely delicious.
- It is also a great source of protein and vitamins.
However, earlier, these stately dishes were mostly restricted to their local regions unless famous by interstate or international travellers.
But thanks to social media and numerous other platforms, this delicacy has transcended regional boundaries and entered the hearts and kitchens of food lovers around the world.
The first time I received it was during a local volunteering event in California, my volunteer partner's mom (who is from Gujarat) sent this for us.
At first bite, I was totally in love with it and was so surprised as I had never had lentil cake before and was totally in awe of it!
So, what’s the next best thing after tasting this delicious food?
We learned how to make it and his mom was so generous in teaching us how to make it.
This recipe is exactly the same as the one my aunt taught us, except for the “lauki”, I used zucchini, but you can't tell the difference.
So for the upcoming Holi season, I thought why not create a “Delicious lentil cake” Recipes and share them with you for a fun holiday party!
I made it with mixed dal but you can also make it with one or two dal.
HANDVO RECIPE INGREDIENTS (Savory Lentil Cake)
Before continuing with the process, let's gather these simple ingredients. To make it easier to understand and use, I've divided it into subheadings:
- rice
- Chana dal (Bengali crack)
- Toor dal
- Green Moong Dal (Split Mung Dal)
- uraddar
- Yogurt (curd/dahi)
- sugar
- Fruit Salt (Eno)
- vegetable oil
Vegetables (use or substitute as per choice):
- Zucchini, you can use lauki
- cabbage
- carrot
- Green chilies, chopped
- Jiang Rong
- Cilantro, chopped
- lemon, sliced or quartered
spices:
- Kashmiri red chili powder
- Turmeric powder (haldi)
- Salt
For tempering:
- few curry leaves
- olive oil
- mustard
- sugar
- sesame seeds (till)
- A pinch of asarum (hing)
- coconut powder
Now that you have all the ingredients, let’s start making our dish 🙂
HOW TO MAKE EASY HANDVO RECIPE:
This dish can be made in a variety of ways, such as traditional stovetop, Instant Pot, oven, or even a pressure cooker. I'm making it in the oven.
Again, these steps are divided into sub-headings to make them easier to understand and process:
Soak the lentil-rice mixture:
- Take a large bowl/pan and add all the lentils, rice and water.
- Give it a quick stir and let soak for 30 minutes (for a faster recipe, or 4-5 hours if you have time to enjoy the airy texture of fermentation).
Make the batter mix:
- After soaking, drain the water and transfer the mixture to a food processor or grinder.
- Pulse for 3-4 minutes to form a grainy batter.
Add spices and vegetables:
- Now, transfer the batter to the same bowl and add yogurt, spices and grated vegetables.
- Add fruit salt (eno) and mix to form a homogeneous batter.
Baking Handvo:
- Transfer the mixed batter to a greased/buttered cake tin.
- Bake at 375°F (190°C) for 30-40 minutes or until golden brown.
Tempering (optional step) is highly recommended for flavor:
- Heat the pan and add all the tempering ingredients.
- Cook over medium-low heat for 2 minutes, then turn off the heat.
- Drizzle this temper over warm cake.
- Add chopped cilantro, coconut powder and top with a few slices of lemon
The cake is baked until golden brown, creating a crusty exterior that gives way to a moist and flavorful interior.
Now this majestic beauty and flavor is ready to be enjoyed with a variety of refreshing beverages.
The beauty of Handvo is its simplicity and judicious use of ingredients. The main ingredients include rice, lentils (such as split mung gram and split bengal gram), yogurt and various vegetables.
However, the magic happens with the addition of a unique blend of spices including mustard seeds, cumin seeds, asafoetida and curry leaves.
Traditionally, Handvo is cooked in a special pan called a “pan.” 'Handvo cookware' Or place in a heavy-bottomed pot on the stovetop.
However, modern reinventions often involve baking for convenience's sake, and the enticing aroma that fills the kitchen is enough to whet anyone's appetite.
