• To start making the Andhra Style Tomato Cauliflower Koora recipe, first pressure cook the cauliflower and potatoes in a pressure cooker with 1 cup of water, salt for 1 whistle and then switch off.

  • Set it aside to relieve pressure on its own. Heat the kadai with oil, add mustard seeds and let it splash for a few seconds.

  • Add curry leaves and beat for another 10 seconds. Next, add chopped onions, green chillies and garlic. Sauté the onions until they turn translucent.

  • Once the onions are soft and translucent, add the tomatoes and a pinch of salt and sauté until the tomatoes are mushy and the raw taste is gone. Add the cooked cauliflower and potatoes to the kadai.

  • Add spice powders like garam masala, red chilli powder, coriander powder, turmeric powder and mix everything well. Cover and cook for another 2 minutes.

  • Open the lid and check for salt and season to your taste.
