To start making Mulakootal recipe, first wash, peel and dice all the vegetables. You can use any vegetables you have at home. I like to use vegetables such as carrots, lauki, chicken drumsticks, beans, potatoes, white squash, and cauliflower.
Place in a large pot (use an earthen pot if you have one, it tastes great) or in a small pot pressure cookercook all the vegetables in a little water with salt and turmeric.
in another pressure cookercook the dal and keep aside.
Dry toast all sauce ingredients except coconut for 2-3 minutes until fragrant and lightly browned.
Grind the coconut and roasted spices together into a smooth paste, adding little water if required.
Add the dal and coconut paste to the boiled vegetables and cook for another 5 minutes until the flavors blend and the raw smell of coconut disappears.
in a small TadkapanHeat coconut oil, add mustard seeds, red chilli and curry leaves and fry for 2 minutes.
Pour it over the curry and serve. Serve Mulakootal with hot rice for a perfect summer lunch.
