About Creamy Chicken Pasta
Delicious pasta with creamy chicken, mushroom garlic sauce, milk, butter and Parmesan cheese. This creamy chicken pasta is not only delicious and easy to make, but it's also light thanks to the use of milk.
This pasta was created because a lot of people, myself included, stayed away from my Chicken Alfredo because of the heavy cream used. Not anymore, this pasta tastes so creamy and light because it uses a combination of milk and parmesan cheese to create that creamy flavor.
The starch in the pasta water is added to the sauce, creating the emulsification that makes this creamy chicken pasta so delicious.

Creamy Chicken Pasta Ingredients
spaghetti – I used spaghetti. But I've made this pasta with many different shapes of pasta, like bowtie, fettuccine, penne, and rigatoni.
chicken – You can use whole chicken breasts, season them, fry them and shred them and add them to your pasta. Sliced chicken breasts are the easy option.
vegetable – I used mushrooms and peppers. You can use corn, peas, broccoli, cauliflower.
garlic – The most important seasoning in pasta is garlic. Add a good amount of chopped garlic for extra flavour.
milk – To make the creamy sauce, I used whole milk. You can use any plant milk or nut milk instead of cow's milk.
Parmesan cheese – The Parmesan cheese emulsifies with the milk and starch in the pasta, creating a creamy sauce.
Butter or olive oil – I used both in this pasta dish. For a vegetarian option, use olive oil instead of butter. You can also use vegan butter.
How to Make Creamy Pasta Sauce with Milk

You can make creamy pasta sauce without cream. I use milk to make pasta sauce. The starch in the pasta will emulsify with the Parmesan cheese and milk, creating a creamy texture, so keeping it covered is crucial.
How to Make Creamy Chicken Pasta (Step-by-Step Pictures)

1) Cook the pasta in boiling salted water. Cook the pasta 2 minutes less than indicated on the package. Drain and set aside. I used spaghetti, but you can use bow ties or any shape of pasta.

2) Heat olive oil in a wok. You can also cook chicken in butter. Let the oil heat up.
3) Add the cut chicken breasts and sprinkle with salt and black pepper. In fact, you can season the chicken with any of your favorite seasonings, such as cajun, peri peri.
4) Fry the chicken for 2 to 3 minutes until cooked. Chicken breasts don't take much time at all.
5) Take the chicken out and put it into a clean bowl and set aside.
Make Creamy Chicken Sauce
6) In the same pan, add some butter. I used garlic herb flavored butter. But you can use regular butter. I also added 1 tablespoon of olive oil to prevent the butter from burning.
7) Add chopped onions or shallots. Sauté onions in butter for 1 minute, until onions begin to soften.
8) Add minced garlic and stir-fry for 1 minute until garlic is fragrant.
9) Then add the chopped green peppers and mushrooms. You can add any vegetables of your choice like baby corn, corn, carrots, green beans.
10) Add red pepper flakes, salt and black pepper. Good toss.
11) Then pour in the milk. I used whole milk. You can add a little cream if you want.
12) Add the cooked chicken to the milk and stir evenly.
Make Creamy Chicken Pasta
13) Add the cooked pasta to the sauce.
14) Add chopped parsley and Parmesan cheese to the pasta. Good toss.
15) Mix all ingredients evenly and lower the flame. Cover and simmer for 3 minutes.
16) Remove the lid and mix all ingredients evenly. The pasta will soak up all the milk and become very creamy. Finally sprinkle with Parmesan cheese and serve hot.
