- We take a bowl and mix olive oil, chili flakes, garlic powder, salt and za'atar.
- Mix everything and set aside.
Then we cut the washed and patted eggplant into long slices 1/2 inch thick.
and spread generously “Za'tar Oil Spread” on each slice (side up).
Then place the eggplant slices into the preheated air fryer basket and air fry for 12-15 minutes or until the eggplant is golden brown and crispy.
Remove from the air fryer and let sit for a few minutes.
Now garnish with feta cheese, pomegranate seeds, fresh mint leaves, zaatar and a little honey.
Transfer to a plate and serve fresh.

1/2 cup feta cheese – crumbled

6 sprigs fresh mint leaves – thinly sliced

1/2 cup pomegranate seeds

1 tablespoon za'atar spice

2 tablespoons honey

- Preheat air fryer to 375°F (190°C).
- Wash and cut eggplant into 1/2-inch rounds.
- In a bowl, combine olive oil, za'atar, garlic powder, chili flakes, and salt. Mix and set aside.
- Brush the eggplant slices facing up generously with the za'atar mixture.
- Arrange the coated eggplant slices in a single layer in the air fryer basket, making sure not to overcrowd (Mine holds 2 slices)
- Air fry for 12-15 minutes, or until golden brown and crispy.
- Remove from the air fryer and let sit for a few minutes.
- Top with crumbled feta cheese, pomegranate seeds, mint leaves, za'atar and a drizzle of honey.
- Transfer to a plate and serve fresh.

eggplant – I used thick round ones, you can even do the same thing with Chinese eggplants but cut the cooking time in half.
