When it comes to choosing one nut over another, I always go with almonds or badam. I really like them because they are so versatile and have so many health benefits. This is Badam Laddu recipe which is super easy, quick and super delicious. With a little bit of badam and other elements, make this almond ladoo and it's something delicious and fresh! About Badam Ladu
This is the Badam Laddu recipe: roasted, ground and shaped. Yes, just 4 ingredients and follow these steps to make cute ladool in 20 minutes. That's pretty quick, right? These ladoos are a healthy dessert for kids and adults.
I have roasted the almonds for this Badam Ladoo recipe, you can even blanch them first and then roast them. Roasting is definitely a faster option since blanching and peeling each almond takes some time.
Badam has a warming effect on the body. Therefore, these ladoos are great during winters and monsoons.Some of my other favorite candies in the winter are badam halwa, Dry Fruit Laddu, Atta Radu and gond kradu.
You can also make laddu for your family by roasting and grinding other nuts and seeds. This is also a great way to bind without adding any additional ghee, oil or fat. Because nuts and seeds have their own natural fats to do this.
Numerous combinations are possible using nuts.For example, this Badam Laddu, then Kaju Kish Mishrado (Cashew Raisin Laddu), badampistaradu (almond pistachio ladoo) and so on. You can also mix 3 to 4 nuts or dry fruits and make ladoos from them.
Usually when I'm ready to consume it at home, I make a small batch of Badam Ladoo and store it because almond flour goes bad easily. For making it on Diwali or any other festive occasion, the recipe can be scaled up for large batch production. To keep ladoo in good condition longer, keep refrigerated.
When I prepare ladoos, I try to avoid adding sugar in the mixture. Most of the time my sweetener of choice is jaggery. For ladoos made with nuts and seeds, you can easily use jaggery instead of sugar. Therefore, Badam Laddu goes well with jaggery and even jaggery and coconut sugar.
Another way to add sweetness to Badam Ladoo is to use raisins, soaked figs and dates or dry berries instead of jaggery. These are natural sweeteners that make these ladoos healthier. You can also use some jaggery and raisin combination like I have done in the recipe. It's entirely your choice.
Once you follow this special recipe of Badam Laddu, you will find that the taste of these ladoo is very different from using sugar or jaggery syrup. The taste of Badam Ladoo is somewhat similar to that of the ground Peanut Ladoo.
As I mentioned before, almonds are full of benefits due to their nutritional content. The most notable benefit is that it's great for your brain. Soaking almonds overnight and eating them in the morning is a common tradition in almost every Indian household.

Step-by-step guide
How to Make Badam Laddu

1. Heat a heavy-bottomed pan. Keep the heat on low or medium and add 1 cup of raw almonds.
2. Begin to toast the almonds, stirring every so often.
3. Continue toasting until the almonds are crispy. Cool and taste some almonds. Make sure not to burn or over brown them. You can even toast almonds in the oven.
4. After the almonds are toasted, add 2 tablespoons of raisins. The raisins are optional and you can leave them out.
5. Mix well.
6. Turn off the heat. Transfer toasted almonds and raisins to another bowl or plate. Let the almonds warm or cool at room temperature.
Making the Ladoo Mix
7. Place almonds and raisins in a grinding jar. Also, add 3 green cardamom seeds.
8. Next, add ⅓ cup of jaggery powder. You can even use jaggery, coconut sugar, raw sugar, or cane sugar instead of jaggery.
9. Run the grinder for a few seconds, then stop. Check for consistency. Continue in the same manner until the almonds reach a good consistency with some of the oil released from the almonds.
You can also use the pulse option in your grinder. You have to run the grinder in sections until a little oil is released from the almonds.
10. Take a small portion of the ladoo mixture in your hand and press. It should hold its shape and not break.
Don't grind too much at once or you'll release a lot of fat from the almonds and you'll end up with almond butter.

11. Place the ladoo mixture into the same bowl or plate where you cooled the almonds and raisins.
12. Now, take a small portion of the almond mixture and place it on your palms and start shaping the laddoo.
13. Make Badam Laddu from the remaining mixture. This recipe makes 10 small almond ladoos. Recipe can easily be doubled or tripled. Store these laddus in an airtight jar and keep refrigerated.
14. Have healthy Badam Laddu as dessert.
Expert Tips
- You have to toast the almonds until they are crispy, but not too brown or burnt. During this process, cool some almonds, taste and check. Can also be baked in the oven.
- Raisins are not mandatory. You can miss it.
- You can use cane sugar, jaggery, raw sugar or coconut sugar instead of regular jaggery.
- Avoid grinding almonds at once for a long time. More grinding means more fat is released from the almonds. This way you will end up with almond butter.
- You can make about 10 small ladoo with this recipe. Scale up to earn more. Serve immediately or store in an airtight container and refrigerate for later use.
